Cauliflower soup

Ingredients:
Cauliflower 1 cup Cauliflower stalk 1 1/2 cups Milk 3 cups Grated cheese 3 tbsp Maida 2 tbsp Oil 1 1/2 tbsp Ghee 1/2 tbsp Salt 3/4 tsp Pepper 1/2 tsp Onion 1 Garlic 6 flakes
Directions:
Grate or chop cauliflower into tiny pieces. Chop cauliflower stalk, onion and garlic. Heat ghee in a pan,add cauliflower bits and fry and fry for a couple of minutes ,on a slow fire till partially cooked, but still crunchy. Sprincle a pinch of salt and pepper on it, stir once and keep aside. Heat oil in a thick vessel, add onion garlic , and cauliflower stalk. Fry well till onion turns transperent. Add maida and fry on a slow fire till raw smell disappears. Add one cup of water and cook till the cauliflower stalk becomes tender, strirring all the time. Remove from heat and allow to cool. Liquidise into a fine paste and pour it back into vessel. Add milk and one cup of water , salt and pepper and cook, stirring all the time till thick. To serve place two or three tbsp of the fried cauliflower mixture in a soup bowl-pour soup over it, sprinkle a little cheese on top and serve piping hot. Note: Any other vegetable like peas or carrot or a combination of two or three vegetables together can be made into a creamed vegetable soup following the above recipe.
