Cream of Vegetable Soup

Ingredients:


Cauliflower 1/4
Carrot 1
Beans 4
Peas 1/2 cup
Milk 2 cups
Ghee 3 tbsp
Water 1 cup
Onion 1
Garlic 4 cloves
Salt 3/4 tsp
Pepper powder 1/4 tsp


Directions:


  • Chop cauliflower and beans into small bits. Grate carrot , shell the peas .
  • Keep aside 4 tbsp of the vegetables aside and fry it in 1 tbsp of ghee slightly add a pinch of salt and pepper powder.This is the garnish.
  • Heat the remaining ghee chopped onion and garlic and fry till light brown in color.
  • Add maida (1/2 tbsp) and fry till the raw smell disappears.
  • Add milk, water, salt, pepper and vegetables and simmer till the vegetables are cooked. Puree when cold.
  • To serve heat the soup. In each cup put 1/2 tbsp of the garnish,
  • Keep aside and pour hot soup over it. Sprinkle a little cheese.
