Minestrone Soup

Ingredients:


Tomatoes 6
Carrot 1
Onion 1
Garlic 6 flakes
Cloves 2
Haricot beans
(soya beans or rajma
can also beused) 2 tbsp
Cooked noodles 2 tbsp
Grated cheese 2 tbsp
Cream 2 tbsp
Oil 2 tbsp
Flour 2 tbsp
Salt 1 1/4 tsp
Sugar 1 tsp
Pepper powder 1/2 tsp
Milk 1 cup


Directions:


  • Soak beans overnight in water. Wash and cook till tender.
  • Chop all vegetables.
  • Heat oil in a pressure cooker. Add onion, garlic and cloves and fry till onion is light gold in color.
  • Add tomatoes and carrot and fry till the tomatoes become soft and mushy.
  • Add flour and fry till the raw smell of the flour disappears. Pour four cups of water , add salt, sugar and pepper powder.
  • Pressure cook for ten minutes.When cold liquidise the soup, strain and keep aside.
  • Mix in milk, the cooked beans and noodles.
  • Serve hot, garnished with a sprinkling of cheese and a dollop of cream.
