Palak Soup

Ingredients:
Palak(spinach) 1 1/2 cups Milk 1 cup Maida 2 tbsp Oil 1 1/2 tbsp Salt 1 tsp Sugar 1 tsp Pepper Powder 1/2 tsp Onion 1 Garlic 6 flakes
Directions:
Chop palak, onion and garlic. Heat oil in a thick vessel, add the onion and garlic. Fry till the onion becomes light gold in color. Add palak and fry till wilted. Add maida and fry on a slow fire till the raw smell of maida disappeares. Add one and half cups of water, sugar, salt and pepper. Cook for a few minutes. Remove from heat and allow it to cool. Liquidise into a fine puree in a mixi, empty the palak mixture back into the vessel. Add half cup of water and one cup milk to it. heat well and serve hot, garnished with a swirl of cream and sprinkling of grated cheese on top.
