Spring Onion and Potato Soup

Spring Onion and Potato Soup





Ingredients

Oil 2 tbsp
Spring onions 450 Gms
Potatoes 200 Gms
water 5 cups
Milk 1/2 cup
Salt and black pepper to taste



Directions
1. Heat the oil.
2. Add the peeled and chopped potatoes and spring onions.
3. Cook on medium fire for 10 minutes, stirring occasionally.
4. Add water, salt and ground pepper.
5. Cover the vessel and cook for about thirty minutes till the vegetables turn soft.
6. Transfer the contents into a blender and turn it into a smooth paste.
7. Bring it back to a boil and serve hot after garnishing it with finely chopped green shots of the spring onions.
