Tomato Soup

Ingredients:


Tomatoes 6
Carrot 1
Onion 1
Garlic 6 flakes (small)
Cinnamon 1 cm
Cloves 4
Milk 1 cup
Mint leaves 2 tbsp
Maida 2 tbsp (level)
Salt 1 1/4 tsp
Oil 1 1/2 tbsp
Sugar 1 tsp
Pepper powder 1/2 tsp


Directions:


  • Chop tomatoes, onion and garlic. Grate the carrot.
  • Heat oil in a pressure cooker, add the cinnamon and clove, fry a bit, add onion, garlic and mint leaves, fry till the onion becomes light gold in color.
  • Add tomatoes and carrot and fry till the tomatoes become mushy.
  • Add maida and fry till the raw smell disappears.
  • Add three cups water, salt, sugar and pepper and pressure cook for ten minutes.When cold, liquidise soup and strain it.
  • Add one cup water and one cup milk, check for taste and heat well.
  • Serve soup piping hot, garnished with a blob of cream and a scattering of toasted bread croutons on top.
